3rd Annual Winemakers Weekend in Dunkeld - 15th-17th August 2025
WINEMAKERS WEEKEND at the Royal Mail Hotel
This August, we're delighted to offer our Members a rare opportunity to dine at the Royal Mail Hotel alongside leading wine producers and enjoy a curated tasting of their wines.
The Royal Mail Club is thrilled to join forces with the following winemakers:

Joshua Cooper, Joshua Cooper Wines – Macedon Ranges, VIC
Tim Kirk, Clonakilla – Murrumbateman, NSW
Sarah Crowe, Yarra Yering – Yarra Valley, VIC
Adam Wadewitz, Tolpuddle / Shaw + Smith – Coal River, TAS / Adelaide Hills, SA
Alongside our MC for Friday night, Master Sommelier Sebastian Crowther.
THE ITINERARY
Friday 15th August
Dinner at Wickens – 6.30pm
Enjoy a five-course degustation by Executive Chef Robin Wickens, with each course paired by a different winemaker. The Royal Mail Club will have exclusive use of Wickens, offering an intimate experience as producers share insights into their wines and regions.
Saturday 16th August
The Royal Mail Club 'Cellar Door' – 3pm
Join the winemakers in the Royal Mail Hotel’s renowned cellar for an afternoon tasting. Members and their guests will explore a broader range of wines, guided by the producers, alongside local cheese and charcuterie.
Dinner at Parker St Project - 6:30pm
A relaxed evening shared with fellow Members and winemakers over a casual meal at Parker St Project.
THE WINEMAKERS
Joshua Cooper – Joshua Cooper Wines, Macedon Ranges VIC
Raised at Cobaw Ridge, Joshua launched his own label in 2012. Working with top growers in Macedon and Heathcote, he crafts elegant, thoughtful wines that blend classic structure with creative flair.
Sarah Crowe – Yarra Yering, Yarra Valley VIC
Winemaker and GM at Yarra Yering, Sarah is known for her refined, vineyard-driven wines. A James Halliday Winemaker of the Year, she brings deep skill and subtlety to one of the Yarra Valley’s most iconic estates.
Tim Kirk – Clonakilla, Murrumbateman NSW
Chief Winemaker at Clonakilla, Tim pioneered the Shiraz Viognier style in Australia. His benchmark wines are cool-climate classics, celebrated both nationally and internationally.
Damon Koerner – Koerner Wine, Clare Valley SA
Damon and his wife Maddy create bright, expressive wines from Clare and the Adelaide Hills. With roots in traditional viticulture and a passion for innovation, Koerner wines tell a new story of regional style.
Adam Wadewitz – Shaw + Smith / Tolpuddle, SA & TAS
A leading voice in Australian winemaking, Adam oversees Shaw + Smith and Tolpuddle. Known for precision and elegance, his wines are among the country’s most acclaimed. Winemaker of the Year, 2022.
Sebastian Crowther MS – Master Sommelier
One of Australia’s few Master Sommeliers, Seb is a celebrated wine expert and mentor. He now heads Real Wines, curating fine global selections, and remains a passionate Royal Mail Club member.
Enjoy a degustation dinner in the two-hatted Wickens at Royal Mail on Friday and a relaxed multi-course dinner in Parker St Project on Saturday. Each of the five winemakers will pour two featured wines with Friday’s menu, and offer 3–4 wines for Saturday’s cellar tasting, some of which will also be poured at dinner.
